Description

Crispy Pata is a well-loved Filipino dish made from a deep-fried pork leg that is simmered until tender, then fried to golden perfection. It’s a celebration dish often served on special occasions and family gatherings. With crunchy skin and juicy meat, it pairs perfectly with vinegar-soy dipping sauce and steamed rice..

  1. Clean and Prepare the Pata:

    Thoroughly scrub and rinse the pork leg. You can ask the butcher to slice it slightly for easier cooking.

  2. Boil the Pork Leg:

    In a large pot, place the pata, salt, peppercorns, garlic, bay leaves, and vinegar.

  3. Pour enough water to submerge the pork.

  4. Bring to a boil, then lower heat and simmer for 1.5 to 2 hours until meat is fork-tender.

  5. Dry and Chill:

    Remove the pork leg and let it cool.

  6. Drain when done.  Refrigerate overnight to dry the skin.

    Pat dry with paper towels and refrigerate uncovered for at least 4 hours or overnight to dry out the skin (for maximum crispiness).

  7. Deep Frying Time (Caution: Be careful of oil splatter!):

    Heat enough oil in a deep, wide pan.
  8. Carefully slide in the pork leg and fry until golden brown and crispy, about 10–15 minutes. Turn occasionally if needed.
  9. Drain on paper towels.
  10. Serve and Enjoy:
